We are thrilled to be able to introduce the new chef and owner of Rutland Cookery School as James Ray. For the next few months James and Robin will be teaching the workshops side by side, to ensure a seamless transition.
With over 30 years of culinary experience, James brings a wealth of knowledge, creativity and global inspiration to our cookery school.
Throughout his career, James has enjoyed an exciting and diverse journey. He has held chef positions in award-winning restaurants from the UK to Australia’s renowned Barossa Valley and McLaren Vale wine regions, trained celebrities for MasterChef and mentored aspiring young chefs at Leicester College, and even prepared private dining experiences for celebrities including Nicholas Cage and Johnny Depp.
James’s culinary perspective has been shaped by extensive international travel. He worked in a cookery school in Chiang Mai, Thailand, and traveled through China, South East Asia and South America inspiring a style that blends classical training with vibrant global flavours.
For the past 15 years, he has worked locally, heading up a team and helping to establish a strong brand for The Three Goats Group at The Sun Inn, Great Easton.
Today, James brings his experience, mentorship and international flair to our cookery school.

On the cuisine courses, Robin’s approach is not just to teach recipes and techniques, but also a thorough understanding of the ingredients, flavours and culture of the food being prepared.
Robin loves to travel to the country of origin and see food being prepared and cooked first hand, by locals. He spends time discussing ingredients and recipes with the local people and then brings back these recipes and experiences, along with photos, videos and a few authentic cooking utensils/pots, for use in his workshops. This approach helps to bring the workshop to life and offers you a truly authentic experience. It works especially well with the Indian Street Food course where the use of photos and video enables Robin to breathe a little of the Mumbai heat and dust into it!
A really wonderful day learning the art of afternoon tea with Robin. I learnt so many useful tips and tricks and came away with loads of lovely treats. It's really inspired me and I can't wait to return. Robins freshly made roasted pepper soup and sourdough bread for lunch was an added bonus! Thank you Robin.
Indian Curries
Just wanted to say that attending the Indian Curry day last week was great. Robin pitches the day just right with really interesting facts about the ingredients and supported us to achieve new skills. The curries were so tasty and have fresh flavours. The sessions were well organised. I will be back for another different interesting day.
I attended my very first workshop (fish) just over a year ago, and my most recent one only a week ago! Although I wrote a review last September, I’ve had the joy of another 5 workshops since then, and I’ve really loved each one – Italian, Middle Eastern, Thai street food, Indian street food, and knife skills.
