Fish Masterclass

On this full day workshop you will learn how to prepare and cook a variety of fish.

Many people are reluctant to undertake fish preparation. This six hour workshop takes the fear out of fish, and gives you the knowledge, skills and confidence to go home and enjoy preparing fish in your own kitchen. It really is quick, straight-forward and fun when you know how. We also discuss what to look for when buying fresh fish.

During the workshop you will prepare and fillet two fish and we cook a variety of dishes with additional fish that teach how to steam, poach, pan-fry (with crispy skin), grill / bake and cure. Dishes we have cooked on previous workshops include poached salmon, sauce vierge, steamed sea bream with soy, ginger and spring onion, pan-fried salmon with a Middle Eastern curry sauce, trout gravadlax (complete with accompanying mayonnaise), grilled ling with a Parmesan crust and tomato fondu. Dishes may vary according to availability.

Like all our workshops, this course is hands-on and you will leave the day equipped with the skills and knowledge to recreate impressive dishes at home.

The workshop starts promptly at 10am and finishes at 4pm. We eat what we make in the morning for lunch but there may still be leftovers to take home, so please bring some storage containers.

Dietary requirements:

Please note, this workshop is suitable for pescetarians, not vegetarians or vegans. It can be made suitable for coeliacs but you must contact us beforehand so we can adapt the recipes accordingly.  Please note, gluten is used and stored at the school.

Other information:

All refreshments, equipment and aprons are provided. A booklet of recipes is also provided at the end of the workshop.

Everyone works individually at their own workstations, sharing only a 4 burner induction hob and standard size fan assisted oven with one other learner. We all work together at the same pace with each stage demonstrated before you do it yourself.

Please wear flat shoes with a closed toe – this is for your safety and comfort as we will be on our feet most of the time.

We have an adjustable workstation for those who may need to sit down or are in a wheelchair.
