Knife Skills

On this half day workshop you will learn professional knife skills in the kitchen, how to look after your knives properly and which knives are best for which purpose.

Generally 3 – 4 properly cared for knives will see you through most kitchen preparation.  We start off by discussing the purpose of each knife type with the focus on the two most useful sizes. The use of a whet / oil stone is demonstrated and we  spend time learning how to use a steel correctly for keeping a razor sharp edge on your knives. We practice chopping, slicing and dicing to get you cooking like a professional. You will also learn how to joint a chicken – which you will take home with you.

By the end of the workshop you will have increased your confidence in using a knife correctly, and know how to keep a keen edge on it – essential for safe and speedy preparation and an ideal first course to start with.

All knives are provided. Please be aware these are very sharp and great care must be taken when using them!

A set of the knives we use can be purchased from the school website at a cost of £115 for 3 knives and a steel. Please follow the link here. They are Victorinox knives with non-slip Fibrox handles. Swiss made they are excellent knives, easy to keep sharp and great value for money.

The workshop starts promptly at 10am and finishes at 1pm. Please note, lunch is not provided on this three hour workshop.

Other information:

This workshop is suitable for vegetarians provided you are okay with raw poultry preparation (we have had vegetarians on this workshop who are happy to prepare meat) and coeliacs. Please email us if you need to know more about the allergens in this course.

All refreshments, equipment and aprons are provided but please bring some storage containers for your jointed chicken.

Please wear flat shoes with a closed toe – this is for your safety and comfort, we will be on our feet most of the time.
